Recipe
1 Boneless Chicken legs cut into cubes ( marinate with light soya/dark soya/sesame oil/pepper and corn flour) -> stir fry the chicken to 90% cooked
Dried Chinese mushrooms (soak in water till soft)
1 lap cheong ( soak in hot water for 10-15min, remove the wax and slice)
2-3 stalk of Xiao bai chye 小白菜(blanched)
Thick dark soya to drizzle to rice to mix
Methods
1. Rinse/wash rice as per normal, add water to clean rice follow by Alchemy Fibre™️ ( 2 cups of rice = 2 heap tbsp of Alchemy Fibre™️ ) and press cook as per rice cooker ( optional: I have add in 1 tbsp of chicken rice paste to enhance the flavor)
2. Once rice cooker left around, 10min, add in the lap cheong, mushroom and chicken on top of rice and close lid and finished up the 10min till rice cooked.
3. Add in the blanched Xiao bai chye and drizzle dark thick soya and mix well. (Optional: I add some sauce from the stir fry chicken as well for more flavor) Ready to serve
